Mmm. My sister and brother-in-law (and nephew!) made this beautiful salad and to add to our Thanksgiving meal this past weekend. I had a giant plate full of food. Ate the salad first... added more salad. Ate it again. Added more. Then, a few hours after dinner, I rummaged into the fridge to find the leftovers. And I ate them all.

I then made it again the next day. So it wouldn't be fair for me to hold out on you!

Ingredients for Salad:

Kale Fennel Dried Cranberries Chopped Walnuts Cheddar or Asiago Cheese (I used Goat Cheddar)

Ingredients for Dressing:

Lemon Juice Olive Oil Sea Salt & Pepper

Easy, right? Rinse your kale, tear it up into pieces, drizzle a little olive oil over it and then MASSAGE it for about 3 minutes. Really get in there. It makes it taste entirely different. Chop up some fennel. Add as much or as little of the ingredients as you want - I hate getting technical, but everyone's different. Wing it! The salad dressing is about 50/50 lemon juice and olive oil, and just add a little salt and pepper.

It's beautiful, fluffy & green, bursting with flavour and an awesome fall salad. Enjoy!
