When I picked Courtney up at her condo to carry on to the gym before our session last week, I demanded to know what that AMAZING smell was coming from her kitchen! Courtney had made lentil tacos that smelled incredible. So, upon request, she has shared her recipe with me, and now with all of you!

2 cups cooked lentils 2 tbsp pure tomato sauce 1 tbsp low-sodium soy sauce 1 tbsp chilli powder 2 tsp lemon or lime (juice) 1 1/2 tsp ground cumin 1/2 tsp paprika 1/4 tsp garlic powder (granulated) 1/4 tsp onion powder (granulated) 1/4 tsp dried organo or marjoram 1/8 tsp cayenne pepper nondairy milk (optional) salsa

Pulse the lentils in a food processor, add the rest of the ingredients. Serve in gluten free or corn tortillas, with chopped lettuce, tomato, avocado and any other toppings of your choice!
