Here, you will find yet another alternative to pub food. What you eat can be exciting, interesting and satisfying without being mauled by grease and salt.
Recipe: -1 "Food for Life" Wheat and Gluten-Free Brown rice tortilla -1/2 red pepper, sliced into sticks -sliced cucumber -chopped red onion -spring salad mix (or baby spinach) "Earth Balance" Vegan butter spread -1/2 cup Homemade hummus (see recipe)
Homemade Hummus: -1 can no salt added chickpeas -2 tbsp organic Tahini -1/2 lemon -2 cloves garlic -1 tbsp Extra Virgin Olive Oil -water
Place all ingredients in food processor and blend until smooth. Add water to desired consistency.
1) Spread 3/4 of the hummus onto half of the tortilla. Top with veggies, salad mix. 2) Spread the remaining 1/4 of the hummus overtop and gently fold tortilla in half 3) Spread thin layer of Earth Balance spread on both sides of the tortilla and place on nonstick skillet over medium heat 4) Cook for about 4 mins on each side or until desired crispiness. 5) Cut in half and serve with spring salad with balsamic vinegar and a squeeze of lemon or lime
