This soup is one of my favourites because: A) it's easy

B) it's nutritious

C) it's delicious

d) it's filling

e) it tastes rich and indulgent but it's light (virtually no fat)

f) it's heat and go

g) it's easy

So… you should try it.


1 cauliflower, chopped into chunks 2 medium yukon gold / white potatoes, cut into chunks 1 onion, cut into chunks 1 box of reduced sodium chicken stock 1/2 cup of water 1-2 cloves of garlic, minced / pressed salt and pepper to taste

Throw it all into a big pot. Heat it on low/medium (3 is ideal) for about an hour. Carefully ladle it into a blender. You will likely have to blend it in two shifts, so match the consistency to the remaining "soup" in the pot for the first round, if you divide it up in tupperware. The feature photo has sprinkled balderson for added indulgence. :)

WARNING: Let the soup cool a bit before you blend, as mine mildly erupted all over myself, my kitchen and my pup. Lucky she's got that coat!
